Let them eat Cake

Cake anyone?

I have been baking today, I made a Victoria Sandwich. What is remarkable about this you ask? Well, doing so has made me feel remarkably pleased with myself; smug even!

You see, the 4 eggs I used to make it, came from my own hens, and the Raspberry Jam used to sandwich it together was made last summer by my own fair hands from fruit I grew.  I get an enormous sense of well being and satisfaction from such endeavours, don't ask me to explain why,  it is just how it is. Seeds sprouting have a similar effect on me, as does seeing the Violets outside my house. It fills me with hope and contentment.

I know, I need to get out more.

What a lovely treat Zoe? It is indeed smug but understandable for reaping the rewards of your harvest and hard earned worked are well deserved in that very appetizing sponge cake. Enjoy every morsel. Your post has reminded me of my mum who always made a Victoria Sponge on St Patricks Day. Thanks for the memories and enjoy that cake!

sadly, I shan't get to eat a scrap (diabetic and the sugar is bad for me). Kevin and Thomas will demolish it though, and daughter Robyn is not happy to be missing out as she is in London, although I do believe she is off out celebrating the day this evening.

That looks like the perfect Victoria sponge - and don't apologise for admitting getting great satisfaction from using your own produce. It's a great feeling.

That looks like a prize winner if ever I saw one. You should enter all the local shows with your produce and baking/jam making. Your preserves are delicious, and have all been scoffed with toast mmmmmm! Bet your ladies could lay some prize winning eggs too!! xxx

I only ever entered a food competition once at the ripe old age of 12. It ended badly.
I had made a Victoria Sandwich that time too (I was an old hand at it by then) and my Mum decided to take it along to the WI show and enter it. Unfortunately, it won, and the WI ladies were not in the slightest bit amused about loosing to a child.

Hi Zoe,

Now that's a pretty gorgeous cake! I totally understand that feeling of pride and sense of achievement when creating something as beautiful as your cake. I'm looking forward to the allotment omelette!

Well if you need to get out more so do I! Every time I eat a perfect poached egg from one of our hens or spread my own marmalade on our home made bread I get a glow of satisfaction.

It looks absolutely delicious Zoe, and I'm sorry you can't sample it yourself.
You are very lucky with so much self sufficiency though. We're very aware of that here in NZ (and the Asia Pacific area) just now. The 'girls' are obviously very happy indeed with you. That's brilliant! So exciting!
